Homemade Guacamole

If you know me at all, you know I LOVE me some Mexican food. Tacos, burritos, enchiladas, fajitas, quesadillas, taquitos... All of it. But there's one thing that really makes a good Mexican meal, and that, mis amigos, is fresh guacamole.

This recipe is so stinking good, you could really just eat it by the spoonful. (I...er... might have.) But it's amazing with cantina thin tortilla chips too. Or scooped onto a chicken taco, or a black bean tostada, or, well, anything, really. 

Note: I don't know why, but this stuff spoils very quickly, even refrigerated in a sealed container. It won't last longer than a day or two. But you'll probably eat it all before then anyway. 


2 ripe avocados 
1 medium roma tomato, chopped
Juice of 2 limes
1/2 medium onion, chopped
1/4 cup plain, nonfat Greek yogurt
Pinch of garlic powder
Pinch of dried cilantro
Pinch of salt
Pinch of black pepper


Pit and peel the avocados, then place them in a bowl. Add the lime juice, onion, Greek yogurt, garlic, cilantro, salt, and pepper. Mash everything with a potato masher. With a spoon, gently mix in the tomatoes. Refrigerate and enjoy! Makes about 8 servings.

#10 - Jog in the Early Morning on a Beach

I've always wanted to be one of those cool, fit chicks you see jogging on the beach. At sunrise. Living the dream life.  

I've always been too fat and out of shape to do that. I couldn't run fifty feet. And in sand? Who are you kidding?

But I've been running for five months now. My strength and endurance have multiplied immensely. And this weekend, my sister and I went on a quick holiday trip to Hilton Head Island, South Carolina, where we stayed in an oceanfront resort with a walkway to the beach. 

So Sunday morning, I got up at sunrise and did this:


And it was incredible. 

One of my 2013 goals is to do 5 things on my bucket list. Here's 1/5. 

Hello, 2013!

Exactly one year has passed since I got serious about changing my lifestyle. 

Since that day, I've lost a total of 36 pounds and 24 inches. I've dropped over 2 sizes, from an XXL shirt to a Large (sometimes a Medium), from size 20 jeans to size 14, and from a size 18 dress to a size 14. My BMI has gone from 37.5 to 31.5. And you can see the differences in these pictures.

In 2013, if I keep doing what I've been doing, I should reach my goal weight of 150 lbs. I've got an entire system of challenges and plans to get me there. Here's hoping that one year from today, I can add a sexy third picture to this lineup!
